Local chocolate is merging with local fruit at Katherine Anne Confections’ summer with themed truffle-making parties! Confectionista Katherine Duncan is opening her kitchen and recipe book for two evenings of chocolate tasting, chocolate-making and champagne.
Attendees will sample chocolates, discuss pairings, and taste ingredients before moving on to designing flavors and creating the creamy ganache topping. In addition creating hand-rolled truffles, each participant will leave with a sampling of the truffles they created.
Local Fruits - July 1, 6:30 pm
All of the fruit comes from local farmers markets and is picked just 24 hours before the class. The result is sweeter fruit and a more delicious truffle combination. Attendees will work with local apricots, blackberries, raspberries, strawberries, rhubarb, cherries and more!
Herbal Infusions - August 1, 6:30 pm
Katherine Anne’s Rosemary Sea Salt caramel masters the herbs & sweets duo and this class will teach how to create truffles flavored with rosemary, thyme, and basil, as well as what ingredients pair best with those herbs.
