Chicagoans love steak. I don’t know if it’s a Midwestern thing or an homage to the stockyards, but we’ve got so many steakhouses you can barely cross a downtown block without stumbling across one. Many of them are chains, like Ruth’s Chris, Smith & Wollensky, and Sullivan’s. Others, like Gene & Georgetti’s and Gibson’s, are part of the city’s vernacular.
