Each month Falafill invites a local chef to create a wrap and proceeds are donated to charity. Past chefs include Stephanie Izard, Bill Kim, Jared Van Camp, and Charlie McKenna. This month Paul Virant joins the impressive roster.
He’s got a new cookbook coming out that’s all about preserving, so there are pickled peppers from the Perennial Virant kitchen (say that three times fast). These are accompanied by organic black bean falafel, spicy mayo, cilantro, pea shoots, and a lemon-garlic vinaigrette and served on a thin pita. He’s keeping it local and getting the black beans and pea shoots from Three Sisters Garden. Want to get your own? They’re a vendor at Green City Market.
This month’s beneficiary is the Frontera Farmer Foundation and you can get the wrap for $6.50 at Falafill’s Lakeview location, 3202 N Broadway. Loopers will be able to get it later this month when they open their new spot on Adams.
