Strings Ramen Shop's Lakeview location now offers vegan ramen, available in two varieties, featuring meatless broth, and egg-free ramen noodles made with rice flour.
The new Vegan Miso Ramen begins with a slow simmered broth made with seaweed dashi, soy sauce, plus red, white, and brown miso. From there, it's topped with corn, wood ear mushrooms, menma, red onions, bean sprouts, scallions, toasted seaweed, drizzled with scallion-infused oil, $15.95.
Based on popular demand, Strings' executive chef Katie Dong has also created a special vegan version of Strings' signature, fiery-hot Hell Ramen, featuring Shoyu broth made with seaweed dashi and soy sauce. Available in five levels of increasing heat, starting at $15.95. The new Vegan Hell Ramen is topped with wood ear mushrooms, menma, crispy french onions, corn, bean sprouts, red onions, scallions, toasted shredded Japanese chili, and drizzled with scallion-infused oil.
Since opening in 2014 in Chicago's Chinatown, Strings Ramen Shop has expanded to include the Lakeview location, opened 2017, and a Madison, Wisconsin outpost, opened this year. Vegan Ramen is currently available only at Strings' Lakeview location, 919 West Belmont, Chicago. Open 11 a.m. to Midnight 7-days-a-week.
